Creosote builds up because of the cooling of  smoke as it  rises up though the chimney,  this can cause the creosote to condense on the inner part of the chimney wall.  Burning dry and seasoned wood, and having an annual  inspection and cleaning of your chimney are the two best methods to avoid chimney fires.
